Vegan Creamy Roasted Cauliflower Soup

For those of you that asked me to share the full recipe on this delicious soup that I posted to instagram some time ago..... here it is!


Vegan Creamy Roasted Cauliflower Soup


Ingredients

  • 1 head cauliflower

  • 1/2 sweet onion

  • garlic

  • lemon

  • 4 cups veggie broth

  • 2 tablespoons vegan butter

  • ground nutmeg

  • extra virgin olive oil

  • pink salt or sea salt

  • parsley

  • croutons homemade or store bought

Directions

Separate the head of Cauliflower into florets and place them on a large rimmed baking sheet. toss the cauliflower with olive oil until lightly and evenly coated. sprinkle of salt and bake in the oven for approximately 30 minutes at 425’ until the cauliflower florets are lightly brown on the edges.


While your cauliflower is roasting, place a Dutch oven stove top over medium heat. Add about a tablespoon of olive oil, add salt onion and garlic. stirring occasionally for approximately 5 to 7 minutes until onions are tender and garlic is fragrant. Add your veggie broth to the Dutch oven and simmer for about 15 to 20 minutes. Meanwhile remove your cauliflower florets from the oven choose 3 to 4 florets and place to the side for later garnish. Take your other roasted cauliflower florets and place them in a high powered blender, such as a @vitamix, add the juice of one lemon and your nutmeg and blend until smooth. Next add your 2 tablespoons of vegan butter and blend again until smooth.


Pour soup carefully into bowls and place cauliflower pieces on top, for looks, along with chopped parsley.


I love to add croutons to finish off this beautiful comforting vegan soup. You can purchase store bought croutons or make your own by simply cubing your favorite type of bread, placing it on a baking sheet with a drizzle of olive oil, oregano, salt and pepper, and bake for about ten minutes at 400’.
