I just can’t eat enough avocados. I am also Greek and i could probably eat feta on anything Here is one of my favorite flavorful, surprisingly fun recipes, antioxidant loaded, detox pomegranate guacamole. A modern organic twist on a traditional Mexican side dish.
Ingredients : 2 small organic avocados 1 pomegranate seeded 1 scoop organic plain Greek yogurt 1 handful chopped cilantro 1 jalapeño pepper 1 handful crumbled feta cheese (or goat cheese) Juice of 1 lime Himalayan pink salt (fine and course) (sea salt is fine, do not use regular salt) Fresh turmeric root to be grated
Recipe : Chop avocados into chunky paste add scoop yogurt and lime juice. Mix well to guacamole consistency. Slice jalapeño and chopped cilantro and mix in. Add some salt. Mix in fresh pomegrate seeds. Top w more pomegranate seeds, a little more crumbled cheese, cilantro and grate fresh turmeric root on top. Season with more salt to taste.
